Simple supper: Georgian style Chicken with Beet and Walnut Sauces

This likely shouldn't be called a simple supper.  Perhaps a straightforward supper would be a more accurate description.  It is a split chicken, roasted on a shallow pan lined with olive oil, butter, garlic and thyme.  I love roast chicken, especially when it has been split which shortens the cooking time and offers lots of opportunities to get different flavours in close contact with the meat.  But honestly, the sides here, in particular
